When breaking off, there is still 8–10 cm of the arrow inside. Moreover, this part is the most tender and juicy.

Once the arrow is overripe, it will inevitably break off. Therefore, it is important not to miss the moment when the arrows have already appeared, have grown a little, but have not yet become stiff. Even if a lot of garlic is planted, and all the arrows cannot be eaten at once, they need to be drawn out as long as possible. After cutting into pieces, the arrows can be frozen and used later.

For frying, as a rule, the thinnest upper part is cut off, and everything else, including the seed head that has not yet formed completely, is cut into pieces 3-4 cm long. Beforehand, you need to hold the arrows in boiling water for 2-4 minutes. The time depends on their level of maturity. If they are already harsh, then a little longer. After that, they are reclined in a colander to drain excess liquid.

Now you can start frying directly. The arrows are fried in vegetable oil, the choice of which can be left to the hostess. First of all, onions are fried until golden brown, of which 2-3 pieces are taken. medium size by about 0.5 kg garlic arrows. You can add carrots, tomatoes, or a spoonful of tomato paste to the onions. Then boiled arrows are already added to this frying.
