Vinaigrette is a legendary vegetable salad, which was often loved to be served to the Soviet New Year's table, which does not lose its relevance to this day. And all because the vinaigrette is not only very tasty and suitable as an appetizer for many dishes, but also healthy. After all, its main component is sauerkraut, a source of vitamin C, as well as other vegetables.

  • - Medium-sized beets - 2 pcs.;
  • - Medium-sized potatoes - 2 pcs.;
  • - Canned green peas - 0.5 cans;
  • - Small onion head - 1 pc.;
  • - Sunflower oil - 3 tbsp. l.

Step 1

Preparation of the vinaigrette begins with boiling vegetables. Rinse the beets thoroughly under running water. To preserve the bright saturated color of the root crop, you do not need to peel the skin, and also cut off the tail and the place of growth of the tops. Usually beets are cooked for about 1.5-2 hours. You can do it the usual way, or you can speed up the process with a couple of tricks.

Step 2

Fill a small saucepan with cold water. As soon as it boils, lower the vegetables and bring the water to a boil again, add a tablespoon of sugar. Cook for 25-30 minutes. Then drain the hot water from the pan and draw the icy water from the tap, leaving the beets in it for 5 minutes. Due to the sharp change in temperature, the vegetables will reach readiness.

We also boil the potatoes in their uniforms, cool them and peel them. After that, the beets and potatoes need to be chopped. How exactly to do this is a matter of taste. Alternatively, they can be cut into small, identical cubes. Or potatoes - in cubes, and grate beets on a coarse grater.

Step 4

Peel the onion head, cut into small pieces and rinse in cold water to remove excess bitterness. If your sauerkraut is coarsely chopped, you can chop it lightly if desired. Drain the liquid from the green peas.

Step 5

Finally, add all the ingredients to a bowl or large salad bowl - potatoes, beets, onions, sauerkraut, and green peas. Drizzle with sunflower oil and mix well. The vinaigrette is ready! It can be served immediately.
