Pea soups are distinguished by their rich and pleasant taste. From time to time you need to cook pea soup, because peas are very nutritious - they contain a lot of carbohydrates and protein. It also contains minerals. With garlic oil, the soup will turn out to be even more aromatic, but let's not deviate far from the traditional recipe for this soup - we will cook it with smoked meats.

- - 300 g of yellow split peas;
- - 250 g butter;
- - 200 g smoked pork ribs;
- - 1 head of garlic;
- - 5 pork skins;
- - 20 g dried thyme;
- - 1 carrot;
- - allspice, salt.
Instructions
Step 1
Prepare the broth first. Put smoked pork ribs in cold water, place on the stove, bring to a boil, add offal (pork skins). Descale from time to time to prevent the broth from getting too dark.
Step 2
Peel the carrots, cut into pieces, send to the pan, cook for 40 minutes. At this time, let the peas soak in boiled water.
Step 3
Prepare the garlic oil while the broth is cooking. Take coarse salt, 250 g of oil and a head of garlic. Peel the garlic, mix with salt and oil, add dried thyme, allspice. All this must be ground in a mortar, and then put into the refrigerator.
Step 4
Throw the peas into the finished meat broth. Cook for 20 minutes, then remove the ribs and cook the peas until tender. The skins can be left in the broth.
Step 5
Remove the meat from the ribs, put in soup bowls, pour over with pea soup. You can add fried croutons to each plate. Sprinkle with a little dry thyme, add a spoonful of garlic oil.
