We will need:

Ingredients:

• garlic - 2 heads;

• vegetable oil - 60 ml;

• onion - 1 onion;

• caraway seeds - 1 tablespoon;

• frozen green peas - 800 g;

• vegetable broth - 1 l;

• greens (dill, parsley, basil, etc.);

• salt and pepper to taste.

How to cook:

Preheat oven to 200 ° C. Put the unpeeled heads of garlic on a baking sheet, sprinkle them with vegetable oil. The garlic should be baked in the oven for about 25 minutes, until tender. Let the garlic cool slightly, then divide it into cloves and gently squeeze the pulp out of the skin.

Heat vegetable oil in a skillet. Peel the onion, chop finely and fry until golden brown (3-5 minutes).

Add the caraway seeds to the onion, stir the mixture for about 1 minute. Add the peas and previously baked garlic to the skillet.

Stir until relatively smooth and pour the vegetable broth into the pan. Bring the mixture to a boil and simmer for 6-8 minutes, stirring occasionally. Remove the soup from the heat and let it sit for a couple of minutes.

Pour the soup into a blender in portions and blend until a puree consistency is achieved. Season to taste. Cardamom and saffron are especially good options. Return soup to pot and heat again. The soup is ready! Chop the herbs into small pieces to add to the soup when serving.

Traditionally, the puree soup is served with crispy bread.
