Bright pea and mint puree soup will create a festive mood during lunch. Mint gives the dish an unusual taste and goes well with all the ingredients.

- - 400 g fresh green peas
- - a few teaspoons of pine nuts
- - olive oil

- - 100 g of soft cheese

Step 1
Pour 1 liter of water into a small saucepan and bring to a boil. Add mint leaves, fresh green peas, salt and pepper to taste.
Step 2
Boil the peas with mint for 5-10 minutes, then drain the liquid and turn the mixture into puree using a blender.
Step 3
The puree will turn out to be thick, so while constantly stirring the mixture, add the broth that remained after boiling the peas and mint. As a result, you should have a homogeneous mass of thick soup consistency.
Step 4
Fry pine nuts in a pan without adding oil. They should only brown a little. Cut the cheese into small cubes.
Step 5
After the soup has cooled down, pour it into bowls, to each of which add pine nuts, a teaspoon of vegetable or olive oil, a few cubes of cheese and a mint leaf.
