In moments when I want something unusual and meaty, I cook pork belly in onion skins with the addition of soy sauce. It turns out to be soft, tender, very pleasant to the taste. We eat it literally in a matter of hours.

It is necessary

  • - Pork belly - 0.6 kg,
  • - Water - 1 liter;
  • - Onion peel - how much to eat;
  • - Table salt - 4 tbsp. spoons;
  • - Bay leaves - 2-3 pcs.;
  • - Allspice - 7 pcs.;
  • - Garlic - 1 head;
  • - Dill sprigs - 2 pcs.;
  • - Soy sauce - 1 tbsp. the spoon;
  • - Parsley - to taste.

Instructions

Step 1

If there are no onion skins, peel 10-15 onions and refrigerate. Rinse the husk to remove all the dirt. Place in a saucepan in which you will cook the meat.

Step 2

Rinse the brisket, cut into pieces with a diameter of 10-12 cm. Make a transverse cut in the middle of each slice.

Step 3

Put the meat on top of the onion peel, cover with water. Put the pot on gas. When the water boils, put peppercorns, dill sprigs, salt, bay leaf, soy sauce, parsley, 2 cloves of chopped garlic in a bowl.

Step 4

Cook pork belly for another 25-30 minutes, then remove from heat. Do not overdo it, otherwise the meat will turn out to be somewhat "liquid", although … no less tasty.

Step 5

Put the pan, without removing the brisket from it, in a cool dark place (not in the refrigerator!). Let stand for 8-9 hours so that the meat is better salted and has a rich taste.

Step 6

Then take it out, put it on a newspaper, let it dry a little. Divide into 2 parts, the first of which grate with garlic and spices, put in the refrigerator. The second - twist in a meat grinder along with the remaining garlic, add the chicken cube and ground pepper. It will turn out very tasty!

Step 7

However, such a division can not be done, but immediately serve the pork brisket, boiled in onion skins, to the table.
