- 125 grams of flour.

- 2 kilograms of rye flour;
- 750 milliliters of warm water;

Step 1
On the first day, you need to prepare the leaven. Dissolve yeast in 375 ml of water. The water must be warm for better fermentation. But in no case use hot water: it will boil the yeast and the sourdough will not work. Pour in 125 grams of flour, replace the dough, dust a little with flour, cover with a cloth and a lid. Put it in a warm place until tomorrow.
Step 2
On the second day, dissolve the resulting starter culture in 250-375 milliliters of warm water to make the dough runny. Mix thoroughly.
Step 3
Choose a large, comfortable dish that doubles as a dough. Pour in the rest of the warm water and all the liquid sourdough. Pour about 1/3 of the flour into the mixture. Stir very quickly, smooth and dust with flour. Cover the dish with a lid and place in a warm place for 12-14 hours.
Step 4
After this time, add salt and remaining flour. Now you need to knead the dough for a long time and very thoroughly. After kneading, divide the dough into loaves, cover them with a cloth and leave in a warm place until raised. They should increase by about 2 times.
Step 5
If you bake bread in a real rustic oven, then its taste will be unforgettable, and its residence time in the oven will be 2-2.5 hours. If you use a bread maker, the cooking time will depend on the model (read the instructions).
