Bagels are famous American ring-shaped buns. Today this dish is traditional in the United States of America, but the authorship still belongs to the Jews. At the beginning of the twentieth century, they fled from persecution to America and brought with them a recipe for this pastry. Usually they are cut in two and filled with some kind of fillings. It is delicious to use juicy and soft bagels along with coffee.
It is necessary
- - soda - 1, 5 tablespoons;
- - water - 2 liters;
- - salt - 1 tsp;
- - sugar - 2 tablespoons;
- - dry yeast - 7 g;
- - butter - 50 g;
- - milk - 350 ml;
- - flour - 550 g.
Instructions
Step 1
Make a brew. Dissolve yeast in 50 ml milk, add a pinch of sugar and stir well, let stand for 15 minutes.

While the dough is infused, heat 150 ml of milk, add butter, salt and sugar. Pour the rest of the cold milk into the hot milk. Sift flour and pour in yeast. Knead the dough and then cover it with a towel or plastic wrap. Place in some warm place for 2 hours so that it doubles.
Step 3
After the allotted time, knead the dough again and let it rise again. You can make the dough in the evening, put it in the refrigerator until morning and then start baking.
Step 4
Divide the finished dough into 12 pieces, form into bagels. Bring the water to a boil and, while reducing the heat, add the baking soda. As a result, the water should boil slightly.
Step 5
Use a slotted spoon to place the bagels, one at a time for 40 seconds, in boiling water. Flip them several times in the water. You can put 2-3 rolls in the water at a time.
Step 6
Next, take out the products with a slotted spoon and place them on a baking sheet, pre-covered with baking paper. You can brush the bagels with whipped yolk and sugar, sprinkle with poppy seeds, cheddar cheese, sesame seeds, etc.
Step 7
Bake American buns in a 180oC oven for half an hour, until golden brown. Next, you can cut the bagels and place the filling to your taste.
