Terrine is an exquisite French cuisine dish that is quite popular among Russian gourmets. Terrine can be made from a variety of foods. In this recipe, a variant is presented where vegetables are mainly used, which give the dish a special taste.
It is necessary
- - eggplants (3-4 pcs.);
- –Sweet peppers (3 pcs.);
- –Processed cheese (3-4 pcs.);
- - garlic (3-4 cloves);
- –Light mayonnaise (25 g);
- –Fill to taste;
- –Tomatoes (2 pcs.);
- –Pepper and salt to taste.
Instructions
Step 1
Prepare the eggplant first. To do this, take vegetables, rinse. Cut into long longitudinal strips, salt and transfer to a separate container. Next, take a frying pan, add a little vegetable oil and fry each plastic eggplant for about 3 minutes until soft and crispy. When the eggplants are ready, place the vegetables on a paper towel to absorb the excess fat.
Step 2
Peppers also need to be rinsed well under running water. Peel the seeds from the peppers, cut off the stalks. Divide the peppers into several pieces and place on parchment paper. Bake in the oven at about 140 degrees until soft. Wait for the peppers to cool and chop the vegetables into cubes. The same should be done with tomatoes.
Step 3
Free the processed cheese from the packaging, chop with a blender or grater, transfer to a deep bowl. Season the curd with chopped garlic, mayonnaise, salt and herbs.
Step 4
The next step is to lay out the terrine in layers. This process should be done in a deep cup or saucepan, as the terrine should ideally be semi-circular. Place the eggplants on the bottom of the container in the form of a fan. Next, lay out some of the cheese mass, leveling it with a spoon. 3rd layer - baked peppers, 4th layer - tomatoes. The next layers are repeated in the same sequence until all the vegetables are finished.
Step 5
Set the terrine in a cool place overnight, then flip the container onto a plate in the morning and garnish with olives or lemon slices.
