Preparing ingredients for frying

For the future frying of champignons on the grill, the mushrooms themselves are needed (for a company of 5-6 people, 1-1.5 kilograms of product will be needed), two large lemons, half a spoonful of sea salt, 50-60 milliliters of vegetable oil (sunflower oil and olive), as well as spices to taste.

If you want this dish to turn out beautiful, and the mushrooms do not fall apart during the cooking process, you need to purchase fresh champignons, in which the leg is very tightly connected to the cap. So, the first stage of food preparation includes a thorough washing of the mushrooms. Then the mushrooms need to be placed in a deep bowl, pour over them with lemon juice (make sure that no bones get along with it, which can be very bitter in the future), sprinkle with salt, seasonings and spices. Before pickling, the mushrooms must be mixed very thoroughly so that the marinade affects all parts of the mushrooms.

The optimal time for pickling champignons is about 5-6 hours in a bowl with a very tightly closed lid.

Cooking champignons

An open fire for frying mushrooms on skewers is not suitable, you need to wait for the formation of large and hot coals (birch firewood is best). Then you need to string the champignons, and very tightly so that the mushrooms do not dry out, burn and retain their juiciness.

It is necessary to turn skewers quite often, and cooking mushrooms on hot coals for about 15-20 minutes. Of course, champignons are a product that can be consumed even fresh in salads or other dishes, but you should still fry them well until an appetizing golden color is formed. …

After the above time has elapsed, the mushrooms must be carefully and very carefully removed from the skewers and put on a large, deep dish. Finely chopped fresh herbs (like dill, parsley, green onions or basil) are perfect for decoration, as well as a small amount of lemon juice, which you just need to sprinkle with ready-made mushrooms. You can do another way - put green salad leaves on a plate, on which you have already placed fried champignons. For decorating the dish, a side dish of fresh summer vegetables - cucumbers, bell peppers, radishes, or others - is also perfect.

This dish, for all its lightness, is still quite satisfying, therefore, if you also want to treat yourself to a meat or chicken kebab, then it is better not to gorge yourself on mushrooms first.
