For each shape, prepare a piece of cheesecloth, folded in half.

It is better to cook Easter three days before the holiday, on Maundy Thursday. For cooking, you need to take the freshest and highest quality cottage cheese. Rinse and dry the raisins well, pour boiling water over the almonds, peel them off, chop finely. It is recommended to do the same with walnuts.

Step 3

Rub the cottage cheese through a sieve or pass it through a meat grinder. Separate the whites from the yolks, grind the yolks with sugar, beat the whites until a strong foam. Mix cottage cheese, yolks, raisins and nuts in a separate container, at the end add whipped whites into the curd mass. If you can't boil Easter in a bain-marie, pour the mixed ingredients into a nonstick skillet and simmer, stirring clockwise, until large bubbles start to appear.

Lay out the forms with gauze, fill them with the prepared mass. Do not be intimidated by the abundance of liquid that will flow out of the mold at first. This is normal. Cover Easter on top with gauze and press down with some weight, take it out in the cold.

Step 5

On Friday, remove Easter from the mold, place on a plate and decorate as you wish.
