In Russia, large open or closed pies with filling were traditionally baked for all holidays and family feasts. The dough was used for these purposes in different ways. Meat, fish, mushroom pies were prepared from ordinary yeast dough or from butter, which was more suitable for sweet pastries. Usually, sweet pies with berries, jam or cottage cheese were baked from such a dough.

To prepare butter yeast dough, you need to take:

- fresh yeast - 100 grams;

- butter - 200 grams;

- granulated sugar - 3 tbsp. spoons (for sourdough);

- sugar (for dough) - 1 glass;

- wheat flour - 1 kilogram;

- raw milk - 1 glass;

- raw eggs - 5 pieces;

- vanillin - on the tip of a knife.

In addition, for the filling of the pastry, you will need a very thick jam made of prunes or apples.

Making the cake

First, you need to prepare the dough for the test. To do this, pour fresh yeast with three tablespoons of sugar and pour over slightly warmed milk. Stir the mixture and let the yeast dissolve completely. Then add enough flour to form a batter, it should be thick like strong sour cream. Leave the dough to rise for one hour.

When the dough works well, you will need to add all the eggs, a glass of sugar, softened (or melted) butter and vanillin to the dough. After mixing all this composition, you can start adding the remaining flour. You need to add as much flour as the dough will take. If necessary, add a little more or less flour than the recipe says. Continue kneading the mixture until the dough begins to peel off from your hands and dishes. Place the finished kneaded dough in a warm place and cover with a towel or cling film. Let the dough come up twice, and knead gently both times.

Divide the finished pastry into two different parts. Most will be for forming the base of the cake, and the smaller part will be for decorating it. Grease a baking sheet with oil (you can use sunflower oil). Roll most of the dough into a layer about the size of a baking sheet. Place the rolled dough on a baking dish, shape the rims.

Spread evenly thick jam over the entire surface of the layer. Roll thin flagella from a small piece of dough that has been set aside and distribute them over the jam in the form of a mesh. Leave the cake to rise for a few minutes. Shake one yolk and brush over all the strips of the mesh with a brush.

Preheat oven to 180 ° C and place the baking sheet in the oven. Bake the sweet pie for 35-40 minutes. You should have a beautiful ruddy mesh. Butter pie with jam can be served hot with milk or tea.

Instead of jam filling, you can use any fresh berries, coarsely grated pumpkin or cottage cheese. In any form, such a cake will turn out delicious and sweet.
