Khachapuri is a Georgian dough dish made with local cheese. There are several basic khachapuri recipes with slight differences in ingredients. Most often, khachapuri is prepared on a yeast-free dough, based on a special dairy starter culture. But, since it is difficult to buy in a regular store, a recipe based on yeast dough appeared.

It is necessary

  • Yeast dough khachapuri:
  • - 1 bag of yeast;
  • - 200 ml of medium fat milk;
  • - 130 g butter;
  • - 4-5 st. flour;
  • - 2 eggs;
  • - soft unleavened cheese (for example, suluguni);
  • - 1/2 tsp salt;
  • - 1 tsp Sahara;
  • - 1 tbsp. sunflower oil;
  • - 2, 5 tbsp. matsoni.
  • Khachapuri with egg:
  • - 3 glasses of flour;
  • - 200 ml of milk;
  • - 80 g of butter;
  • - 11 eggs;
  • - 15 g dry yeast;
  • - 400 g of suluguni cheese;
  • - 200 g feta cheese;
  • - a pinch of salt and sugar.

Instructions

Step 1

Yeast dough khachapuri

Melt half the butter on the stove in a small saucepan. Then mix it with warm milk and yeast. Wait a few minutes for the yeast to dissolve. Then add yogurt, 1 egg, vegetable oil, salt and sugar to the dough. Mix thoroughly again and begin to gradually add flour to the resulting mass. Make sure that no lumps form in the dough. The dough should be pliable and firm. Cover the container with a towel and place in a warm place for 2 hours. After an hour, if the dough has already risen, stir it.

Step 2

Take care of the stuffing. Crack the remaining egg, separate the white from the yolk. Mix the yolk with the remaining butter, add the cheese grated on a coarse grater there. Stir the filling and season with a little salt.

Step 3

Divide the finished dough into several portions. Roll each into a cake, put an equal amount of filling in the center. Roll the dough around it and roll the pie again with the filling. Make sure that the cheese does not come over the edges of the cake. Grease the finished khachapuri with a small amount of butter or vegetable oil.

Preheat the oven to 200 ° C. Place the tortillas on a baking sheet and set aside for half an hour. Then bake for 15-20 minutes. You can check the readiness of the dough with a fork or a toothpick. Serve the khachapuri 10-15 minutes after baking in a stack. If you plan on having lunch later, the khachapuri can be warmed up in a skillet. These flatbreads will be a good addition to freshly brewed tea.

Khachapuri with egg

Prepare the dough according to a recipe similar to the first type of khachapuri, but exclude vegetable oil and yogurt. Instead, dilute the milk 1 to 2 so that there is enough liquid in the dough.

Step 6

Prepare the filling. Mash cheese and suluguni with a fork or grate, add 1 egg. Divide the dough into 10 pieces, roll out and make small open squares out of the cakes. Place the cheese filling in the center of each of them and let the products distance for 20-30 minutes. In the meantime, preheat the oven to 200 degrees and bake the khachapuri in it for 10 minutes until half cooked. Then take them out and break 1 egg into each of the envelopes.

Step 7

Return the baking sheet to the oven and bake the khachapuri until the eggs are done. Serve hot.
