It is necessary

  • 400-450 grams of spiral pasta (you can take spaghetti),
  • 200-250 grams of goat cheese (you can take feta or feta cheese),
  • 150 grams of parmesan or any other hard cheese,
  • 2 handfuls of shelled walnuts
  • 6 tomatoes sun-dried in oil (can be replaced with tomatoes baked with herbs),
  • 1 small chili pepper
  • 1 bunch of beetroot leaves (can be substituted with spinach)
  • 2 small bunches of parsley or cilantro
  • 2-3 cloves of garlic (you can have more - to taste),
  • 2 teaspoons of sea salt.

Instructions

Step 1

Pour water into a saucepan, salt, bring to a boil and boil the pasta, but do not bring it to full readiness. Save the water drained from the pasta.

Step 2

Peel the garlic, remove the core and chop finely.

Chop the chili pepper in the same way as the garlic.

Cut the tomatoes into small pieces.

Step 3

Preheat a frying pan with olive oil, in which we fry finely chopped garlic with tomatoes and pepper.

Remove the cuttings from the beetroot leaves, chop them finely and add them to the fried vegetables. Stir and fry.

Step 4

Cut the goat cheese or feta cheese (which you have prepared) into small squares.

Parmesan or other hard cheese three on a grater.

Finely chop the peeled walnuts (you can use a blender).

Chop the parsley as small as possible.

Step 5

Add the finished vegetables to the preheated pasta, mix. Add cheeses, chopped nuts and finely chopped parsley, pour in some pasta water and stir.

The dish is ready, we decorate with fresh herbs. If you wish, you can sprinkle the pasta with finely grated cheese.
