This unusual salad combines different flavors, including sweet. Of course, for many, mushrooms without heat treatment are a rather unusual ingredient, but it turns out delicious. For this recipe, champignons or shiitake mushrooms are taken, they must be marinated in a salad dressing. Green spinach leaves and bright orange slices make the salad very bright.
It is necessary
- For four servings:
- - 250 g of mushrooms;
- - a bunch of green onions;
- - 2 oranges;
- - fresh spinach and basil leaves;
- - flakes of red hot pepper.
- For refueling:
- - 1/3 cup olive oil;
- - 3 tbsp. tablespoons of apple cider vinegar;
- - 1 teaspoon of granular mustard;
- - a pinch of sugar;
- - sea salt, black pepper.
Instructions
Step 1
Mix olive oil with vinegar. Add some orange juice, which you collect by slicing the oranges into thin segments.
Step 2
Pour mustard and sugar into the dressing, pepper, salt, mix. You can add more orange juice to taste. Leave the dressing to infuse for 5 minutes.
Step 3
Peel the mushrooms, cut into slices, mix with red pepper. Add the salad dressing, but not all. Stir, leave for 15 minutes - this is enough time for the thin slices of mushrooms to marinate.
Step 4
Then stir in the orange slices and chopped green onions into the salad.
Step 5
Tear fresh spinach and basil leaves into pieces or cut into thin strips. Add greens to salad, pour over leftover dressing. Season with salt and pepper to taste - this may not be required due to the salty dressing.
Step 6
Mushroom salad with oranges is ready, no additional decoration is required - serve immediately.
