Barley porridge is considered one of the healthiest. Due to the fact that it is prepared from unpolished barley grains, porridge is very rich in fiber and is a real storehouse of vitamins and useful microelements. It has been noticed that regular consumption of barley porridge improves vision and enhances immunity.
"Basic" recipes for barley porridge
To prepare viscous barley porridge you will need:
- 1 glass of barley;
- 4 glasses of water or milk;
- ¼ h. L. salt;
- 1-2 tbsp. l. butter.
First of all, rinse the barley well with cold water. Then pour 4 cups of water into a saucepan, salt and add a tablespoon of oil. When the water boils, add the washed cereal, stir and cook at a low boil for 10-15 minutes. After that, close the dish with the porridge with a lid and put it in an oven preheated to 180 ° C for 30-40 minutes to simmer. Stir the prepared porridge with a spoon, arrange on plates and pour over melted butter.
Viscous cereals are usually boiled in water. Milk can be added after the porridge begins to thicken.
To make a crumbly barley porridge, you need to take the following components:
- 1 glass of barley;
- 2, 5 glasses of water or milk;
- ¼ h. L. salt;
- 1-2 tbsp. l. butter.
Pour water, milk or a mixture of water and milk into a saucepan, put on medium heat and bring to a boil, add salt and butter. Rinse the barley and pour into a boiling liquid. Cook the porridge, stirring occasionally, for 10 minutes. Then transfer the barley porridge into a ceramic pot, cover it with a lid and put it in an oven preheated to 180 ° C for half an hour, where the porridge will reach the desired consistency.
Barley porridge with additives
Barley porridge goes well with meat dishes and vegetable salads, therefore it is often used as a side dish. For this, barley porridge with pork or lamb fat is perfect. To prepare it you will need:
- 2 ½ cups of barley groats;
- 4 ½ glasses of water;
- 100 g of raw pork or lamb fat;
- 1 tsp salt.
Rinse the barley under cold water. Boil water, salt and add washed barley grits. Cook the porridge, stirring occasionally, for about 15 minutes until thickened. Cut fresh inner pork or lamb lard into small cubes or mince. Then put in a frying pan and fry until you get cracklings. After that, pour the melted bacon, instead of with cracklings, into the cooked porridge, stir it and put it in a preheated oven for 30-40 minutes.
To cook barley porridge with mushrooms and vegetables, you need to take:
- 1 glass of barley;
- 2 glasses of water;
- 200 g of fresh mushrooms;
- 1 head of onion;
- 1 carrot;
- vegetable oil;
- salt.
Fry the barley in a dry frying pan. Then add a tablespoon of vegetable oil, mix. Peel and chop onions and carrots. Cut the onion into small cubes, grate the carrots on a coarse grater. Fry vegetables separately in vegetable oil. Wash the mushrooms thoroughly or wipe off very well with a damp cloth, peel and boil in slightly salted water. Then cut into small slices and also fry in vegetable oil.
Combine fried mushrooms and vegetables with barley grits. Stir, pour in boiling water, add salt and simmer over a low heat until tender. Then the porridge should be placed in a preheated oven for half an hour to overwhelm. Barley porridge with mushrooms and vegetables is in perfect harmony with meat, but it can also become an independent dish.
