Sauce in African cuisine is often the centerpiece of a dish, which is complemented by other foods serving as a side dish, in this recipe - meat. A sauce made from the juice of roasted tomatoes with spices imparts its zesty taste to the beef.

It is necessary

  • Beef (brisket or other stew piece) - 800 grams,
  • tomatoes - 7 pcs,
  • medium onion,
  • garlic - 2 cloves,
  • African chili pepper (without it) - 2 pcs,
  • a piece of fresh ginger - 5 cm,
  • water - 1 liter,
  • vegetable oil - 5-6 tbsp. spoons,
  • salt and ground pepper to taste.

Instructions

Step 1

We put a ladle of water on fire and bring to a boil. Cut the tomatoes and scald with boiling water. Remove the skin and core. Grind the tomatoes in a blender until smooth.

Step 2

Peel the onion and grind in a blender (do not mix with tomatoes).

Chop the garlic.

Peel one chili pepper and grind in a mortar. We leave the second intact.

Step 3

Remove all fat from the meat. Cut the meat into equal pieces of about 2-3 cm in size (you can have a little more, but then the cooking time will increase).

Salt and pepper to taste, lay out on a platter.

Add 1/4 of the seasonings, excluding the tomatoes (onion, garlic, chili and ginger). Mix, the meat should be soaked in the marinade. Leave the meat for 5-10 minutes.

We transfer the meat to a large saucepan (no need to add oil or water).

Cook the meat for five minutes, and then pour in a liter of warm water and bring to a boil.

Cooking meat for an hour and a half, watch when done. The meat should be very tender.

We decant the broth from the finished meat. You do not need to pour out the broth, it is useful for the sauce.

Step 5

Heat vegetable oil in a saucepan (about 5-6 tablespoons), add chopped tomatoes and cook over medium heat for about two minutes.

Add the rest of the seasonings to the sauce and mix well.

Pour the meat broth into the sauce and bring to a boil. Cover and boil for 5 minutes.

Step 6

We wash the chili pepper and, without peeling it, put it in a saucepan with sauce. Mix and cook for 5 minutes.

Add the meat and continue cooking for another 10 minutes.

Remove the cooked meat with tomato sauce from the heat. The sauce should not be too thin or too thick. Serve on a platter, garnished with herbs.
