Tomatoes, cucumbers and bell peppers are a classic combination for a summer vitamin salad. This trio can be complemented with original sauces, cheese, herbs and other additives to diversify the dish.
Shopsky salad
Try making a salad with tomatoes, cucumbers, peppers, and feta cheese. For this traditional Bulgarian dish, choose ripe meaty tomatoes with a sweetish flavor.
You will need:
- 2-3 small strong cucumbers;
- 1-2 sweet peppers;
- 3 tomatoes;
- 70 g feta cheese;
- 50 ml of vegetable oil;
- 1 teaspoon lemon juice;
- salt to taste.
Wash and dry vegetables. Cut the tomatoes into slices, the cucumbers into rings, and the pepper into strips. Finely chop the cheese. In a deep bowl, combine vegetables, pour oil and freshly squeezed lemon juice over them, add salt. Sprinkle the salad with cheese crumbs on top. Serve on its own or to accompany grilled meats, fish and sausages.
"Shopsky" salad can be prepared without feta cheese - this option is often served on a lean table.
Salad with vegetables and beans
For more filling snacks, complement the tomatoes and peppers with potatoes and canned beans. Not fresh, but pickled cucumbers will be especially good in harmony with such a set of products.
You will need:
- 3 potatoes;
- 2 sweet peppers;
- 2 tomatoes;
- 2 pickled cucumbers;
- 100 g of white canned beans;
- a bunch of iceberg lettuce;
- 2 eggs;
- 100 g of natural yogurt;
- 1 teaspoon of sweet mustard;
- 0.25 lemon juice;
- salt;
- ground black pepper;
- parsley.
Rinse the potatoes and boil. Refrigerate it and peel it. Remove seeds and septa from bell peppers. Scald the tomatoes with boiling water and peel them off. Cut the pepper into strips, potatoes, tomatoes and pickled cucumber into thin slices. Tear the green salad into small pieces, mix with chopped vegetables and canned beans.
Prepare the sauce. Pour the yogurt into a separate container, add salt, mustard, freshly ground black pepper and lemon juice. Mix everything well and pour the dressing over the salad. Garnish with slices of hard-boiled eggs and finely chopped parsley before serving.
Eggplant salad
Include eggplants in the vegetable set. Their taste is in good harmony with garlic - the salad will turn out to be more pungent and spicy.
You will need:
- 2 eggplants;
- 2 tomatoes;
- 2 cucumbers;
- 2 sweet peppers;
- 2 cloves of garlic;
- olive oil;
- 1 teaspoon of vinegar;
- salt;
- freshly ground black pepper.
Salad cucumbers can be fresh or pickled.
Bake the eggplants in the oven. Pour boiling water over the tomatoes and peel them. Remove the baffles and seeds from the pepper. Chop the eggplants, cucumbers, peppers and tomatoes into cubes, mix them with chopped garlic and season the salad with oil, vinegar, salt and pepper. Mix everything well. Serve fresh white or whole grain bread with the salad.
