Zucchini stuffed with vegetables is a delicious and unpretentious dish that almost everyone can cook. Stuffed dishes are rightfully considered festive, which means that their preparation will be an occasion to invite friends to the house.
Cooking zucchini stuffed with vegetables. What products are required:
- medium-sized zucchini - 5-6 pcs.;
- small carrots - 1 pc.;
- onions - 2 heads;
- cheese - 50 gr.;
- butter - ½ pack;
- eggs - 2 pcs.;
- boiled rice - 2-3 tablespoons;
- flour - 1 tablespoon;
- sour cream - ½ cup;
- tomato paste - 1 tablespoon;
- salt, pepper, herbs - to taste.
Let's start cooking. Wash the zucchini, peel (if young, you can leave the skin) and cut into circles 3-5 cm thick. Then remove the seeds and some of the pulp from them. Boil water, dip the rings in it and cook for 5-7 minutes. Then take it out, put it in a colander and cool. Finely chop the carrots and onions and lightly fry in butter. Add chopped greens, chopped eggs, boiled rice to them, season with salt, pepper, add a little water and simmer for 5 minutes.
Put cooked minced vegetables on zucchini and put them in a greased form. Sprinkle the zucchini with grated cheese on top and bake in the oven at 180-200 degrees for 10 minutes. During this time, you can prepare a sauce for zucchini. To do this, pass the flour in butter, add sour cream, tomato paste, salt and bring to a boil.
Put the finished zucchini on portioned plates and serve with sour cream-tomato sauce.
