Eggplants, or "vegetables of longevity," as they are called in the East, are incredibly healthy for the heart, due to their high content of potassium salts. This wonderful vegetable is boiled, fried, baked, pickled, and sometimes even eaten raw. Eggplant rolls will be a wonderful and healthy snack on the festive table.

- eggplant - 2-3 pcs.;
- garlic - 1-2 cloves;
- onions - 1-2 pcs.;
- carrots - 1-2 pcs.;
- vegetable oil;
- salt;
- greens.
Instructions
Step 1
Prepare the eggplant. To do this, wash the vegetables thoroughly, dry them and cut them lengthwise into slices about 7-8 mm thick. It is more convenient to use a well-sharpened knife so that the eggplant plates turn out to be even. Salt the eggplants well on both sides and let sit for 15 minutes.
Step 2
Peel 2 onions and chop finely with a knife. Wash the carrots well, peel and grate on a coarse grater. Pass the peeled garlic cloves through a garlic press or finely chop. Heat vegetable oil in a skillet. Make sure that no water gets into it, otherwise you risk getting burned by splashes of boiling oil. Fry the onions, carrots and garlic in hot oil until golden brown. Salt a little.
Step 3
Preheat a skillet with vegetable oil. Spread the eggplant slices on it and fry them on both sides. Put the finished eggplants on a dish and let them cool.
Step 4
Form toasted eggplant rolls. To do this, place a small amount of onion, carrot and garlic filling on each plate and carefully roll the rolls. Secure each one with a toothpick.
Step 5
Place the rolls on a flat dish. Chop parsley or dill and sprinkle on eggplant rolls. Bon Appetit.
