There are a huge number of dishes in the preparation of which eggplant is used. This is due to the usefulness, simplicity of cooking recipes and the availability of components. I suggest trying another delicious dish with this vegetable.
It is necessary
- - 2 large eggplants;
- - 6 tomatoes, large;
- - 170 grams of hard cheese;
- - 180 grams of salami sausage;
- - 2 large cloves of garlic;
- - 1 small bunch of parsley or dill;
- - 5 tablespoons of any tomato paste;
- - 1 teaspoon of lemon juice;
- 2 teaspoons of curry
- - salt, coarsely ground black pepper - to taste.
Instructions
Step 1
Wash vegetables thoroughly. Eggplants are cut lengthwise, in plates no thicker than half a centimeter. Cut the outer slices into small cubes and put them in a deep cup.
Step 2
Garlic is cleaned, washed in water and passed through a special press. Greens are washed under running water, finely chopped and half of the amount is mixed with garlic and tomato paste.
Step 3
Eggplant slices are scalded with boiling water, then poured with water and left for ten minutes. Then they are taken out and lightly sprinkled with lemon juice.
Step 4
The eggplants prepared in this way are salted, sprinkled with curry on top and greased with a sauce of garlic and tomato paste.
Step 5
The sausage and cheese are cut into thin slices and placed on top of the eggplant. Wrapped in rolls and laid out in a prepared form.
Step 6
The tomatoes are scalded with boiling water and the skin is carefully removed from them. Cut them into cubes, put them on top of rolls and add spices.
Step 7
The mold is placed in an oven heated to two hundred degrees for thirty-five minutes. When the dish is ready, place it on a serving plate and sprinkle with the remaining chopped herbs.
