We take the eggplant, wash it, cut it off on both sides. Then we cut each eggplant in half, but not completely, so that it stays on the skin, and so on each part, until the eggplant takes the shape of a fan. Then we take the eggplants, salt and leave for 10 minutes, after the time has elapsed, rinse. Then we take the garlic, peel it, pass it through a garlic press, mix it with butter and finely chopped herbs. Cut the feta cheese and cheese into thin, long slices (along the length of the eggplant). Cut the tomato into half rings.
Let's start stuffing. We take our mixture of oil, garlic and herbs and rub each eggplant well inside, then put cheese and tomato in one half, cheese in the other and so on. We collect our fan and chop it with a toothpick into a whole eggplant or tie it with a thread. We take a baking dish, grease with oil and put our eggplants on it. Fry at 160 degrees for 30-35 minutes. The eggplants can be checked for readiness on the skin, it should be soft. After cooking, put the eggplants on a plate and remove the toothpicks, give the shape of a fan.
