Step 1

Eggplants need to be washed well, dried with napkins, and then cut lengthwise into two halves. Cut out the middle very carefully.

Step 2

Peel the onion and garlic. Finely chop the onion head, and pass the garlic through a press. Lightly fry everything in a preheated frying pan in butter until a light golden hue.

Cut the eggplant pulp into small pieces and add to the onion when it is almost ready. Simmer everything together for about three minutes, then remove the pan from the heat.

Wash and boil the eggs, cut with an egg cutter, then wash and chop the tomato, grate 50 grams of cheese, wash the herbs, dry with paper towels and chop finely. Add all the ingredients to the fried eggplant and mix well. Do not forget to salt the filling, season to taste with ground pepper.

Step 5

Fill the empty eggplant halves with the filling. Grate the remaining cheese and sprinkle over the eggplant. Place vegetables stuffed in this way in an oven preheated to 180 degrees. Bake for about half an hour. To prevent the cheese from burning, cover the halves with foil for fifteen minutes.
