    • beets - 0.5 kg;
    • onions - 2 pcs;
    • vegetable oil - 50 ml;
    • tomato paste - 3 tbsp. l;
    • garlic - 2-3 cloves;
    • salt
    • pepper.

Instructions

Step 1

Choose beets. It should be dark red. The best varieties are Bravo, Bordeaux, Valenta, Egyptian. This beet contains more of the beneficial anthocyanin, a substance that maintains blood cholesterol levels and prevents the development of atherosclerosis.

Step 2

Wash the beets with a soft brush. Remove the remaining leaves. Cook the beets until half cooked. Remove and pour over with cold water - it will be much easier to clean.

Step 3

Peel the onion and cut it into cubes. Pour vegetable oil into the pan. When the oil is hot, add the onion. Pass it until golden brown.

Step 4

Peel the beets. Grate it on a fine grater or with a meat grinder. Add this mixture to the skillet. Continue to fry everything together for 5 minutes over low heat. Stir the beets to prevent them from burning. Season with salt and pepper to taste.

Step 5

Add tomato paste to the beetroot. Mix thoroughly and simmer for another 5-7 minutes under a closed lid. Tomato paste can be replaced with one glass of juice. In this case, extinguish should be done with the lid open so that the excess liquid evaporates. Peel and chop the garlic. Add it to the caviar.

Step 6

Grate one small fresh beet on a fine grater. Put it in cooled caviar - there will be more "live" vitamins.
