This mushroom soup turns out to be hearty, aromatic and mouth-watering. The recipe will become a lifesaver in case there is meat broth left from meatballs or boiled meat. A little mushrooms and potato gnocchi - the first course for lunch is ready.
It is necessary
- For soup:
- - 2 liters of meat broth;
- - 350 g of champignons;
- - 3, 5 tbsp. l. vegetable oil;
- - 1 tbsp. l. flour;
- - a pinch of nutmeg;
- - a little ground black pepper;
- - a little salt;
- - a little dill;
- - 100 g sour cream.
- For gnocchi:
- - 4 potatoes;
- - 2 tbsp. l. flour;
- - 0.5 tsp salt.
Instructions
Step 1
Wash the potatoes well, cook in their uniform for about 20 minutes. Cool and peel the finished potatoes.
Step 2
My dill. Sift the flour (preferably several times).
Step 3
We wash the champignons and cut into slices (you can cut into cubes - to taste). Put the mushrooms in a preheated pan and evaporate the liquid from them.
Step 4
Finely three peeled potatoes. Combine the grated potato mass with sifted flour, knead the pliable and non-sticky dough. Salt a little and form a ball.
Step 5
Pour 1 tbsp into the mushrooms. a spoonful of vegetable oil, continue to fry until light ruddy.
Step 6
We transfer the fried mushrooms to a saucepan with meat broth, set to simmer over medium heat.
Step 7
Divide the dough into 4 parts. Roll each part into a thin sausage (about 2 cm in diameter). We cut each sausage into centimeter thick washers. We crush the washers in the center.
Step 8
Pour two tablespoons of vegetable oil into a frying pan from under the fried mushrooms and fry a spoonful of flour. Stir, season with pepper and a pinch of nutmeg. Add two ladles of broth and cook until smooth. Transfer the resulting mass to a saucepan with soup, mix.
Step 9
Two minutes before the soup is ready, put the potato gnocchi in a saucepan, salt to taste. Reduce the heat to low, if the soup boils, then the gnocchi will boil. The soup is ready, remove from heat and leave to brew for five minutes. Serve the soup in portioned cups, sprinkle with dill. Serve sour cream with the soup.
