Step 1
First you need to pluck the goose and get rid of small feathers and fluff. It will be most convenient to singe the goose carcass.

To prepare the marinade, you need to mix water with vinegar, add onion cut into rings, salt and sugar, herbs to taste. Dip the goose carcass into the marinade and leave for 12-24 hours. The duration of marinating affects the tenderness of the meat.

The marinated carcass of a goose must be grated with salt and stuffed with pieces of bacon.

Peel and seed apples for the filling, finely chop. It is necessary to fill the cavity of the goose carcass with apples, lumps of sugar and a few pieces of bacon.
Step 5
Grease the wild goose carcass with sour cream and fry in a brazier until golden brown, then place in the oven and bake for 2-3 hours at 180-200 degrees. In order for the meat to remain juicy, it is necessary to water the goose carcass with melted juice.
