    • Vinegar - 4 teaspoons in 12 tbsp. spoons of hot water
    • Flour - 8 teaspoons
    • Mustard - 4 tsp
    • Black pepper
    • Bay leaf
    • sugar
    • salt
    • lemon juice to taste.

Instructions

Step 1

Clean the stubble of the boar skin by singing or scalding (and then pulling out coarse hair). Rinse the meat thoroughly. If you need to remove an unpleasant odor (in old individuals, during the rutting period in males), softening tough meat, soak the pieces of boar meat for several hours (depending on the size of the portion) in a 1.5% solution of vinegar.

Step 2

Peel the films of cooked wild boar meat. Stuff with bacon. Chop the onion and root vegetables, fry in fat. Pour hot water and vinegar over the meat. Add the vegetable mixture, cover the stew container and place in the oven. Simmer until tender, adding water and sprinkling the meat with the juice that stands out.
