Eggs Benedict is a popular French breakfast. It consists of toast, hollandaise sauce, a piece of aromatic ham or bacon, and a tender poached egg. In addition to bacon and ham, you can take a slice of salted trout or regular sausage.
It is necessary
- - 1 plate of ham or bacon;
- - 1 round bun;
- - 1 egg;
- - salt and pepper;
- - vinegar.
- For the sauce:
- - 2 tsp lemon juice;
- - 2 yolks;
- - 100 grams of butter;
- - salt.
Instructions

Make hollandaise sauce.
Step 2
Put yolks, salt, one tablespoon of water in a small container, mix everything.

Place in a water bath. Cut the butter, melt lightly and toss into the mixture.

Cook until thick, stirring all the time. You should get a homogeneous mass.
Step 5
To prevent the mixture from overheating, periodically lift the container out of the water and lower it again. Then remove it from the heat.

Cool the sauce a little, add lemon juice, stir. Prepare a poached egg.
Step 7
Fry the bottom of the bun and bacon in a skillet.
Step 8
Place a bun on a plate with bacon on top. If fish or ham is used, then frying is not necessary.
Step 9
Remove the egg with a slotted spoon and place on top of the bacon. Drizzle with hollandaise sauce and sprinkle with freshly ground black pepper.
