They come from vegetables, meat, combinations of meat with vegetables, sweet and savory flour products with a variety of fillings. The recipe for making a roll, presented below, is very simple to perform, and the finished dish will decorate both everyday and festive tables.

It is necessary

    • • 0.5 kg of minced homemade (beef and pork) or beef;
    • • 1, 2 kg of potatoes;
    • • 4-5 pcs. medium-sized champignons;
    • • 1 medium-sized onion;
    • • 3 eggs;
    • • 2-3 tablespoons of sunflower oil;
    • • 50 g of butter;
    • • 1 glass of milk;
    • • 2 tablespoons of flour or bread crumbs;
    • • salt and spices to taste.

Instructions

Step 1

Peel the potatoes and set them to simmer as for mashed potatoes. While the potatoes are boiling, finely chop the onion and mushrooms. Heat the sunflower oil in a skillet and save the onion on it until transparent. Add chopped champignons to the onion and continue to sauté for another 5 minutes. Add all the minced meat to the mushrooms and onions and quickly fry all the products over high heat, stirring vigorously for 5 minutes. Season with salt to taste, add freshly ground black pepper, crushed garlic (1-2 cloves) and meat spices. The filling for the roll is ready.

Step 2

When the potatoes are boiled, season with salt to taste and puree with butter, milk and 2 eggs. Beat the puree well so that there are no lumps.

Use a cotton tea towel (preferably a smooth cloth, not a waffle towel). A piece of gauze in 2-3 additions is also suitable. Soak it well in water, squeeze it and lay it out on the table. Place the mashed potatoes in a rectangle on the center of the fabric in a uniform layer of at least 3 cm. Place the filling on the center of the rectangle, stepping back 3-5 cm from the edges. Lift one edge of the towel so that a layer of mashed potatoes without filling rises with it. Fold it so that the edge of the puree covers slightly more than half of the meat filling. Do the same procedure with the other end of the towel, just remember to remove the opposite end of the fabric first. The layers of mashed potatoes should eventually be overlapped by at least 4-5 cm. For better shaping of the roll, roll it lightly over the surface with quick movements to shape. Without removing the fabric, shape the sides of the roll so that they are smooth and the filling does not show through.

Step 4

Grease a baking sheet with sunflower oil, sprinkle with wheat flour or bread crumbs. On top of it, gently lay the roll directly out of the towel and spread over it with a thickly beaten egg. It is allowed to add a spoonful of sour cream or cream to the egg. Top, if desired, the roll can be sprinkled with a pinch of ground nutmeg.

Bake the roll in an oven preheated to 220 ° C for 15-20 minutes. It must be browned and covered with a golden crust.

Step 5

Serve the roll on a large platter, garnished with sauce, lettuce and other vegetables, cut into portions.
