Choose mussels from the store. The ideal option is fresh, that is, not frozen shellfish, but Russian retail cannot say that it is rich in them. If you buy mussels in unopened shells, make sure that they do not have too much lime deposits on them. As a rule, this factor is adjacent to the hardness of the shellfish. Mussels sold on shell halves are less original when served - however, this does not prevent them from being in favor with our customers. Meat without shells is purchased only for special dishes: for example, paellas, seafood pizzas, etc.

Process fresh mussels the same day they are purchased. Frozen - you can put them in the freezer, but only on condition that they did not have time to thaw on the way home from the store. Re-freezing will not have the best effect on their consumer qualities.

Step 3

Decide in which sauce, broth or marinade you will cook the mussels. In classical cooking, three types of stems are often used. For the first, fry the shallots and tomatoes in olive oil, add dried thyme and a little white pepper. For the second, warm up the cream and dissolve in them three types of cheese, taken in equal amounts: blue with noble mold, gouda and mozzarella. For the third, fry the chopped shallots in butter, then pour in the white wine and evaporate to half the volume. Further, according to the technology, mussels are lowered into the base. Non-frozen mollusks on two shutters are boiled for about 4-5 minutes, frozen on one and two shutters - 7-9 minutes and 11-15 minutes, respectively.

Step 4

Serve the boiled mussels in deep bowls, covering one with the other (it is customary to put the shells in an empty plate). Make sure there is enough sauce. By the way, if you wish, you can submit it separately, it is not forbidden. Mussels go well with rye bread and fresh vegetable salad. Alternatively, you can simply garnish them with a bunch of fresh herbs.
