Undercooked eggs have a semi-liquid yolk and friable white, overcooked - a rubbery consistency and a gray, unappetizing bloom around the yolk. Appreciate the freshness of the eggs prepared for boiling. To do this, pour cold water into a glass, add a tablespoon of salt, stir and dip the egg into the saline solution. Pour salt into a cooking pot (at the rate of 1 teaspoon per liter of liquid), pour cold water. Place eggs thoroughly washed in hot running water into it. To prevent the shells from cracking during cooking, you can put an inverted saucer on the bottom of the dish.

Place the saucepan over moderate heat and wait for the water to boil. From the moment of boiling, the countdown of the cooking time begins. Soft-boiled eggs are boiled for 2-3 minutes, for the degree "in a bag" it will take 4-5 minutes. If you are going to use a product for a salad, then you need to cook it "hard boiled". Then the cooking time after boiling will be 6-8 minutes.
Step 4
After boiling, remove the pan from the heat, drain immediately and pour over the eggs with very cold water. This procedure will make it easier to remove the shell.

If the egg is cracked, for example, during careless transportation, and it is a pity to throw it away, then boil it. To prevent the contents from leaking out, grease the crack in the shell with lemon juice, and generously add salt to the cooking water.
