Baked duck is considered a festive dish. And this is not surprising. After all, this bird, covered with an appetizing golden crust, and even decorated with fruits or vegetables, looks very solemn. You can simply bake it, or you can stuff it with apples, prunes, dried apricots, as well as rice and mushrooms.

It is necessary

    • chilled gutted duck;
    • 500 grams of Antonovka apples;
    • 1 tbsp. l. liquid honey;
    • salt;
    • ground pepper.

Instructions

Step 1

Rinse the duck carcass with cool water. Check if the duck has been carefully plucked. If you find hairs on the carcass, then burn the duck with a lighter or over a gas stove. Dry the carcass with a towel. Rub the inside and outside of the bird with salt and ground pepper. Cover with honey and set aside for a while.

Step 2

Wash Antonov apples. Peel them with a knife and cut into small pieces.

Step 3

Stuff the duck with the sliced apples. Make it tight enough to make the duck round noticeably. Now sew up the carcass with white strong thread, or use toothpicks to fasten the edges of the skin. To prevent the wings from drying out during baking, cut the skin on the sides of the duck and hide the tips of the wings in these cuts.

Step 4

Put the stuffed duck on the roaster, after pouring a couple of tablespoons of water on the bottom of the dish. Close the roaster with a lid and place in an oven preheated to 250 degrees. Roast the duck for 2 hours, periodically pouring the fat that has leaked out of the carcass. Don't forget to check the doneness of the duck. To do this, pierce the duck shank with a sharp knife and make sure that the juice that comes out is light, and not red-pink.

Remove any thread or toothpicks from the finished weft. Place it on a large, pretty platter and surround it with a side dish or fruit if desired.
