Oven-baked duck can decorate any festive table, but nevertheless it is more often cooked for New Year or Christmas. To make the meat juicy and soft, marinate the carcass in advance. It is also important to calculate the baking time correctly.
It is necessary
- - duck duck for 2-2, 5 kg;
- -150 ml mayonnaise;
- -5 cloves of garlic;
- -7 tbsp soy sauce;
- - seasonings and spices for poultry to taste;
- -salt;
- -4 apples;
- -1 orange;
- - prunes, dried apricots and walnuts to taste;
- -foil;
- -Orange juice;
- -vegetable oil.
Instructions
Step 1
To make the meat juicy and not tough, it must be properly marinated. To do this, mix soy sauce and mayonnaise in a deep plate, add chopped garlic, salt and pepper to them. When the mass becomes homogeneous, the carcass is coated with it and the meat is left for 12 hours so that it is well saturated.
Step 2
When the marinating time has expired, the filling is prepared: the apples are peeled and cut into slices, the oranges are sorted into slices, the nuts are chopped, but not to a powder state. Dried fruits are washed and cut into small pieces. All the ingredients are mixed in one bowl and stuffed with the duck, and to make the meat soaked better, the place where the duck is cut is sewn up.
Step 3
Lightly grease a baking sheet and lay out the duck, cover with foil. In order for excess fat to flow out of the bird, it is pierced in several places with a knife. To fully bake the duck, you need to correctly calculate the cooking time. To do this, the weight of the bird is multiplied by 45 minutes, and then another 30 minutes is added.
Step 4
After that, the duck is taken out, all the leaked fat is removed, and the carcass is laid out on a dish and poured with orange juice. By the way, before baking on a baking sheet around the duck, you can put slices of apples and orange, and to make the skin golden, remove the foil 30 minutes before turning off the oven.
