Duck with apples and oranges is one of the most spectacular festive dishes. With proper preparation of this dish, poultry meat turns out to be fragrant, tender and juicy. To prevent the duck from being tough, choose a bird with a lighter skin and lighter weight. The dish you choose plays an important role in roasting the duck. In a cast iron skillet, mold or saucepan, meat will cook much faster.
To cook duck with apples and oranges, you will need the following ingredients:
- duck - 2 kg;
- orange - 1-2 pcs.;
- boiled water - 150 ml;
- green apple - 2 pcs.;
- honey - 4-5 tablespoons;
- salt - to taste;
- olive oil;
- spices to taste.
Rinse the duck thoroughly and pat dry. Then gently scorch the bird over the burner flame. Rub the duck with salt, ground black pepper and olive oil. You can also grate the bird with various spices - basil, marjoram, coriander and others, at your discretion.
Spices can be used both fresh and dried. In any case, the dish will be more flavorful and rich.
Leave the duck to marinate for six to seven hours. Thanks to the marinade, the bird will become softer and more tender.
Now get down to preparing the filling. Peel off the peel and white film of the oranges. Peel and core the apples. Cut the fruit into small cubes. Make sure the cubes are the same size. Stuff the duck with fruit and gently secure the belly with wooden skewers.
Place the duck on a greased baking sheet, pour in a small amount of water and put in an oven preheated to 200 ° C. After fifty minutes, remove the baking sheet, pour the fat that has come out of the duck and put it back in the oven. Repeat this procedure every ten to fifteen minutes.
To make the fat easier to separate from the duck, you can make several punctures on the breast, back and legs with a fork.
Make sure that the duck does not burn. If this starts to happen, cover the bird with foil. Duck is baked in about two hours. Fifteen minutes before cooking, take out the dish, pour over the honey melted in the steam bath and put it back in the oven. Fifteen minutes later, the duck stuffed with oranges and apples is ready. You can serve baked potatoes, vegetable salads or rice as a side dish.
Also, duck with apples and oranges can be cooked with the addition of prunes and nuts. For this recipe you will need:
- duck - 1 pc.;
- oranges - 3 pcs.;
- apples - 2 pcs.;
- walnuts - 50 g;
- dried apricots - 50 g;
- prunes - 50 g;
- dill - 2-3 branches;
- green onions - 3 branches;
- cilantro - - 2-3 branches;
- garlic - 3 cloves;
- onion - 1 pc;
- vegetable oil - 2 tablespoons;
- ground black pepper - to taste;
- salt to taste.
Rub the washed and dried duck inside and out with garlic, salt and ground pepper. Prepare the filling. Chop oranges, apples, nuts, prunes and dried apricots. Mix. Stuff the duck and sew with cooking thread (remember to remove the thread before serving). Brush the poultry with vegetable oil on top to get a golden crust after baking.
Place the stuffed duck on the duck, line it with coarsely chopped onions and apples. Place the rooster in a preheated oven for 2.5-3 hours. From time to time, water the duck with the fat that will come out during baking. Pour freshly squeezed orange juice over the bird twenty minutes before cooking.
Garnish the duck with fresh herbs before serving. Serve with baked potatoes.
