For this dish you will need: pork kidneys, a medium-sized onion, spices for meat with nutmeg, baking soda, sour cream.
• Cut open the pork kidney (not all the way), add baking soda and leave for thirty minutes.
• Rinse the kidneys thoroughly under running warm water, and then cut them into thin strips.
• Place the resulting straws in the skillet and fry until the excess liquid has evaporated.

Kidney roast.
You will need the following ingredients: pork or lamb kidneys, medium-sized carrots and onions, six potatoes, and herbs.
• Bring water to a boil in a saucepan, add salt and dip the kidneys. Let it simmer for five minutes. Then drain the water, add new and bring to a boil again. Repeat this procedure two or three times.
• Grate the carrots, finely chop the onion and send to the skillet, previously greased with sunflower oil. Fry until golden brown.
• Cut the kidneys into small squares and add them to the vegetables.
• Pour some water into the skillet, cover and simmer for about ten minutes.
• Take pickled cucumbers and chop them into small pieces, then add them to the skillet.
• Cover again and simmer for another fifteen minutes.
• Cut the potatoes into cubes. Boil water in a saucepan, place potatoes in it and cook until half cooked.
• Then add the prepared contents from the pan to the potatoes: the kidneys along with the fried vegetables.
• Cover and cook for twenty minutes. Turn off the heat and let the dish sit for about fifteen minutes.
• Chop the herbs finely.
Before serving, place the roast on plates and sprinkle with herbs. The dish is ready!

Beef kidney with sauce.
For this delicious dish you need: half a kilogram of beef kidneys, a medium onion, four pickled cucumbers, flour, sunflower oil, black peppercorns, three bay leaves, herbs.
• Remove films and fat from the kidneys, place them in a saucepan, cover with water and bring to a boil. Then drain the water, rinse the kidneys thoroughly under running warm water, put in a saucepan, pour in new water. Cook until cooked for about an hour and a half.
• In the broth that you got during cooking, prepare the sauce. Take one tablespoon of flour and sunflower oil. Fry until dark brown. Pour in one and a half cups of cooked broth and simmer for about seven minutes.
• Cut the finished buds into small slices.
• Chop the onion finely and sauté until golden brown, add the kidneys and sauté for about three minutes.
• Cut potatoes into wedges and sauté.
• Chop the cucumbers finely.
