Eating pork kidneys is good for your health, but you need to know how to properly handle and cook them. Kidneys are considered a dietary product and even delicacies are prepared from them.
For this dish we need:
- 500 gr. pork kidneys,
- 150 g onions
- 80 gr. melted fat
- 40 gr. lard fat,
- 30 gr. wheat flour,
- 1 glass of cream
- 100 g sausages,
- ground red pepper,
- ground black pepper
- 350gr. rice,
- 2, 5 glasses of water,
- 50 gr. vegetable oil,
- salt.
Cooking method
When buying the kidneys, we carefully check that they look fresh, do not have any spots or damage. First, we rinse them, cut them in half lengthwise, carefully remove all the ducts and cut them across into pieces. Then we steam in hot water, rinse well in cold water and soak in milk for 2 hours. Take the rice, put it in a bowl and rinse it in running cold water several times. Then scald with boiling water.
In a small cauldron, heat the vegetable oil, put the rice, mix well and pour 2.5 cups of boiling water, put in the oven for slow stewing. Peel the onions and cut into half rings, remove the foil from the sausages and cut into slices. Heat melted fat in a frying pan and fry bacon and chopped onion. Now put the kidneys on top, fry over high heat.
Add sausage circles and sprinkle with red pepper. When everything is fried, add cream mixed with flour, salt, black pepper, bring to a boil and remove from heat after a few minutes. We are all set. Stewed rice is used as a side dish.
