Chocolate almond cake is a French cuisine dish. The cake turns out to be tasty and unusual, moderately sweet. And the decoration is almond petals. Such a delicacy will decorate the festive table.

- - 100 g brown sugar
- - 3 eggs
- - 100 g almonds
- - 2 tbsp. l. coffee
- - 180 g dark chocolate
- - 1 tsp. starch
- - 140 g butter
- - 50 g flour
- - 10 ml of cognac
- - 50 g almond petals
Instructions
Step 1
First, brew coffee in a Turk. Mix 3 tbsp. l. water and 1 tsp. coffee, boil and strain well.
Step 2
Finely chop 120 g dark chocolate and add coffee. Put the saucepan on low heat, stirring occasionally, simmer until the chocolate is dissolved.
Step 3
Cut the butter into cubes and whisk with granulated sugar. Separate the whites from the yolks. Add the yolks to the mass, beat until the mass looks like a cream, about 5-10 minutes.
Step 4
Whisk the whites in a mixer, add 1 tbsp. l. granulated sugar and a little salt.
Step 5
Add chocolate to cream and stir well.
Step 6
Grind the almonds in a blender. Add almonds and 1/3 protein to chocolate cream. Combine starch and flour.
Step 7
Add 1/3 of the flour mixture, then 1/3 of the proteins, alternately add the proteins and flour.
Step 8
Grease a baking dish with butter. Pour the mixture into a mold. Place in an oven preheated to 180 degrees and bake for 40-50 minutes. Remove from oven and leave to cool.
Step 9
Prepare the icing. Melt the chocolate, add the cognac and mix everything well. Add 40 g butter and stir. Leave to cool for 15-20 minutes.
Step 10
Lubricate the top and sides of the cake with icing. Decorate the cake with almond petals.
