Khachapuri is a tortilla with cheese, without which no real Georgian feast can do. The shape of this cake is different: from oval to rectangular, but traditionally khachapuri is prepared round.
Ingredients:
- 300 ml of kefir;
- 2, 5 cups wheat flour;
- 1 packet of fast-acting yeast;
- 1 sugar cube;
- 300 g of suluguni cheese for the filling;
- 1 egg;
- greens to taste.
Preparation:
- To make the khachapuri more tender, the dough should be made on kefir. Dissolve yeast, salt and a little sugar in room temperature kefir. Gradually pour the sifted flour into the mass. It is important to pay attention to the consistency of the dough - it should not stick to your hands, but too dense dough will not suit you.
- Knead the dough and wait 25-30 minutes for it to rise.
- Having previously grated the cheese on a medium grater, mix it with a raw egg and finely chopped herbs.
- Roll out the dough with a fairly thin layer (3-5 mm). We spread the filling on it. Try not to overdo it with the amount of filling. With an excessive amount of filling, khachapuri will simply lose its piquant taste.
- We make a round khachapuri and leave a small hole in the dough on top. It serves so that all the heat during cooking can easily go out, in this case the khachapuri will be crispy and juicy.
- In an oven preheated to 200-250 degrees, we bake our product on parchment or special baking paper.
- After the appearance of a golden crust, remove the khachapuri from the oven. The dish is best served 10-15 minutes after cooking. Khachapuri goes well with wine.
