Ingredients:

  • 300 ml of kefir;
  • 2, 5 cups wheat flour;
  • 1 packet of fast-acting yeast;
  • 1 sugar cube;
  • 300 g of suluguni cheese for the filling;
  • 1 egg;
  • greens to taste.

Preparation:

  1. To make the khachapuri more tender, the dough should be made on kefir. Dissolve yeast, salt and a little sugar in room temperature kefir. Gradually pour the sifted flour into the mass. It is important to pay attention to the consistency of the dough - it should not stick to your hands, but too dense dough will not suit you.
  2. Knead the dough and wait 25-30 minutes for it to rise.
  3. Having previously grated the cheese on a medium grater, mix it with a raw egg and finely chopped herbs.
  4. Roll out the dough with a fairly thin layer (3-5 mm). We spread the filling on it. Try not to overdo it with the amount of filling. With an excessive amount of filling, khachapuri will simply lose its piquant taste.
  5. We make a round khachapuri and leave a small hole in the dough on top. It serves so that all the heat during cooking can easily go out, in this case the khachapuri will be crispy and juicy.
  6. In an oven preheated to 200-250 degrees, we bake our product on parchment or special baking paper.
  7. After the appearance of a golden crust, remove the khachapuri from the oven. The dish is best served 10-15 minutes after cooking. Khachapuri goes well with wine.
