On the eve of summer, this light and delicious refreshing dessert will come in very handy.
It is necessary
- The foundation:
- - Coconut flakes - 2 tbsp.;
- - Yolks - 2 pcs.;
- - 75 g of sugar.
- Mousse:
- - 100 g of your favorite berries;
- - 200 g of sugar;
- - 400 ml of coconut milk;
- - 14 g of granulated gelatin;
- - 50 g of gelatin;
- - 500 ml whipping cream.
Instructions
Step 1
Let's start with the basics. Preheat the oven to 160 degrees. Mix the shavings with sugar and yolks, tamp the mixture into a form lined with parchment paper. We bake for 10-12 minutes. Cool it down.
Step 2
In a blender, beat the berries with half the sugar. Add coconut milk and stir until smooth.
Step 3
Soak gelatin in cold water, and then heat (but not boil) and pour into the berry-coconut mass. We mix. Whisk the cream with the remaining sugar separately and combine both mixtures.
Step 4
Pour the mass onto the cake, tighten with cling film and put in the freezer. We get it 2 hours before serving. Garnish with fresh frozen berries if desired. Bon Appetit!
