Okroshka is a traditional Russian dish, which is a cold soup with meat, vegetables and herbs. According to the classic recipe, okroshka is prepared with kvass, but there are many variations of this summer dish.

Traditional okroshka with kvass

Ingredients:

- 300 g of boiled meat / sausages;

- 4 boiled potatoes;

- 5 hard boiled eggs;

- 4 young cucumbers;

- 50 grams of parsley, dill and green onions;

- 200-230 g sour cream;

- salt;

- 1.5-2 liters of kvass.

Preparation:

1. Prepare all the ingredients for okroshka. Pre-cool boiled eggs, potatoes and meat.

2. Cut meat or sausage into cubes. Almost any meat can be used: beef, chicken, turkey.

3. Peel potatoes and eggs, cut into cubes.

4. Wash cucumbers and cut into cubes.

5. Chop half of the green onion, as well as all the dill and parsley.

6. Combine and mix everything. Chop the other half of the onion, grind with salt and mix with sour cream. Season okroshka with this sauce.

7. Then pour okroshka with kvass and put in the refrigerator for an hour and a half.

Vegetable okroshka on kefir

Ingredients:

- 1 liter of kefir;

- 10 pieces of radish;

- 4 boiled eggs;

- 4 fresh cucumbers;

- a bunch of dill and green onions;

- garlic;

- salt.

Preparation:

1. Chop boiled eggs, radishes and cucumbers in a circle or into strips.

2. Chop all the greens, and pass 2 cloves of garlic through a press.

3. Mix all the ingredients, salt and add kefir.

4. Give okroshka on kefir to brew a little and can be served.

Okroshka on mineral water

Ingredients:

- 6 hard boiled eggs;

- 3-4 boiled potatoes;

- 300 g of doctoral sausage;

- 1-2 cucumbers; - a bunch of green onions;

- 100 g sour cream;

- 1.5 liters of carbonated mineral water;

- salt.

Preparation:

1. Eggs and potatoes must be boiled and cooled, and then peeled.

2. Cut sausage, potatoes and eggs into equal cubes.

3. Cut one cucumber into cubes, and grate the other on a coarse grater.

4. Chop the green onion very finely and mix with the rest of the ingredients.

5. Stir everything, add mineral water, add sour cream and salt to taste. Refrigerate and serve.
