  • - 100 g flour.
  • For soufflé:
  • - 8 eggs,
  • - 200 g sugar,
  • - 150 g butter,
  • - 200 ml of milk,
  • - 30 g of gelatin,
  • - 1 tbsp. l. flour,
  • - 70 g poppy seeds,
  • - 1/4 tsp. salt.
  • For jelly:
  • - 200 g cherries,
  • - 200 ml of apple juice,
  • - 0.5 cups of sugar.
  • For decoration:
  • - culinary poppy,
  • - ready-made mastic,
  • - food colorings.

Instructions

Step 1

Beat eggs with sugar, stir with flour and bake cakes in the oven for 20-25 minutes. For the soufflé, separate the egg yolks from the whites and grind the first ones with sugar, pour in the milk, add flour, poppy seeds and mix everything well. Then put the mass in a water bath and heat until thickened. After cooling, add softened butter and beat with a mixer.

Step 2

Dissolve gelatin separately in hot water, cool. Also beat the whites separately until foamy, after adding a little salt there. Add sugar, beat everything again with a mixer. Pour in the gelatin, stir. Mix the protein and yolk masses.

Step 3

Take a cake pan, put one of the cakes on the bottom, then a layer of soufflé, again the cake and on top of the soufflé. Put everything in the refrigerator. Make the jelly by mixing and boiling the steamed cherries, apple juice, and sugar puree. Pour half the jelly over the top of the cake and refrigerate again. Decorate with poppy seeds and a mastic flower mixed with the appropriate dyes. Mastic can be made by mixing dry, condensed milk and powdered sugar in equal proportions.
