If you love pancakes, try varying your favorite recipes. Make original baked pancakes, perfect for a family Sunday breakfast. Serve the pancakes with freshly brewed tea, sour cream, or delicious topping sauces.
Fritters with meat
This dish resembles meat pies, but is much quicker to cook. You do not need to roll out the dough. You just need to knead it and prepare the filling.
You will need:
- 1 glass of sour cream;
- 1 egg;
- 1 teaspoon of baking soda;
- 2 cups wheat flour;
- 1 teaspoon of salt;
- 1 teaspoon of sugar;
- 300 g minced meat;
- 1 small onion;
- vegetable oil for frying.
Beat the egg with 0.5 teaspoons of salt and sugar. Add sour cream, add sifted wheat flour and baking soda in portions. Stir the dough until smooth and let it rest for 10 minutes. Heat vegetable oil in a frying pan, add finely chopped onion and fry until transparent. Add the meat to the skillet and cook until tender, breaking up the lumps with a wooden spatula. Season the minced meat.
Heat oil in a separate skillet. There should not be too much of it, otherwise the pancakes will turn out to be fat and flat. Spoon the dough into the skillet, shaping it into rounded tortillas. Wait until it grabs a little, and then put 1-2 teaspoons of minced meat in the center of the cakes. Pour another dough over it, then turn it over and fry on the other side. Put the finished pancakes on a plate and keep warm until serving. Serve the pancakes with sour cream.
Pancakes with fruit baked
This dish can be prepared for breakfast or served as an afternoon dessert. Vary the fruit set to taste. Apples can be replaced with peaches, dried apricots or bananas.
You will need:
- 1 glass of kefir;
- 1 teaspoon of baking soda;
- 2 cups wheat flour;
- 0.25 teaspoons of salt;
- 1 tbsp. a spoonful of sugar;
- 1 teaspoon of vanilla sugar;
- 2 apples;
- a handful of seedless raisins;
- icing sugar;
- ground cinnamon;
- vegetable oil for frying.
Pour kefir into a deep bowl, add salt, granulated sugar, vanilla sugar and soda. Pour in the sifted flour in portions and knead the dough without lumps. Let it stand for a while. Peel the apples, grate and sprinkle with lemon juice. Add pre-soaked and squeezed raisins, stir.
Heat vegetable oil in a skillet. Spoon the dough portions into it in the form of round or elongated cakes. Wait until the bottom of the pancakes is browned and bubbles appear on the dough. Spread the apples mixed with raisins over the surface. Turn the pancakes over gently to brown the fruit. Place the finished items on a paper towel lined plate. When the excess fat has been absorbed, transfer the pancakes to warmed serving plates with the fruit bake facing up. Sprinkle the mixture of powdered sugar and cinnamon powder over the baked goods.
