Shish kebab is relevant at any time of the year. What summer season is not complete without a picnic with grilled meat on a fire? And on a winter Christmas evening, it is no less pleasant to feast on the most tender pork neck baked over coals. It is important not only to successfully buy a good piece of meat for barbecue, but equally responsibly - to marinate it tasty and juicy. So, here are a few secrets to making an amazing kebab marinade.

Step 1
Connoisseurs of meat masterpieces consider ordinary onion juice to be an ideal marinade. The acidity and bitterness of juice squeezed out of several onions perfectly soften any meat, giving it juiciness and an indescribable aroma. Choose white, large, "evil" onions. Cut it into slices, season with salt and season with spices, remember carefully with your hands until a sufficient amount of juice is formed. Mix the juice with the onion with the meat. Mash the meat with onion juice vigorously, so the juice will saturate the kebab well.
Step 2
Pork or veal is well seasoned with honey marinade. Sweetish taste in combination with hot spices will give the shish kebab an oriental flavor. Melt 2 tablespoons honey, add 3 tablespoons. soy sauce, 1 tsp. sesame oil, 1 tsp sesame seeds, 1 tsp. fresh chopped or dry ginger, ½ tsp. cumin seeds, 2 minced garlic cloves, red pepper and salt. Mix everything and pour in the meat. Marinate for 5 hours.
Step 3
For beef and game, a red wine marinade is suitable. Mix a glass of dry red wine with 2 tbsp. lemon juice and 1 tsp. mustard, 2 tsp. Sahara. Cut one onion into rings, put in a cup, cover with the mixture and add the spices for the kebab. Place on the stove and heat the marinade without boiling. Cool and place the meat in the wine sauce. Leave to marinate for 10 hours.
Step 4
For fish and chicken fillets, a marinade made from yogurt and herbs is suitable. Mix half a cup of natural unsweetened yogurt (low-fat sour cream) with 3 tbsp. tomato paste and 1 tbsp. l. soy sauce. Add 1 tbsp. olive oil, 5 crushed garlic cloves, 2 tbsp. chopped fresh ginger, 1 tsp. ground paprika, finely chopped mint and cilantro, salt and red pepper. Mix thoroughly. Pour the mixture over the fish or chicken and leave to marinate in the refrigerator for 6 hours.
Step 5
Marinade, or rather a seasoning for vegetable kebabs, is made from olive oil combined with finely chopped onions, garlic, parsley or dill. Vegetables should be watered with this seasoning during roasting and before serving.
