Kebab marinade with kiwi and mint

Ingredients (for 2 kg of meat):

- 3 kiwis;

- 50 g fresh mint;

- 3 heads of onions;

- 2 cloves of garlic;

- 1, 5 tbsp. spices for barbecue;

- salt.

Peel the kiwi and cut into quarters. Rinse the mint, spread on a paper towel and let dry. Pick off the green leaves and place them in the bowl of a blender or food processor along with the prepared fruit. Grind everything until smooth. Remove the husks from the bulbs and garlic cloves and cut: the first into thick rings, the second into slices.

Prepare the meat, place it in a large container, sprinkle with spices and salt to taste. Be aware that ready-made seasonings may already contain salt. Add vegetables and green puree to the bowl. Stir everything with your hands, being careful not to break the onion. Place the weight on top and marinate the kebab with kiwi for half an hour.

Kiwi fruits contain a lot of acid, so they very quickly soften the meat and, when kept for a long time, begin to corrode it. In no case do not overexpose the kebab in the marinade, otherwise it will turn into porridge.

Kiwi juice-based kebab marinade

Ingredients (for 2.5 kg of meat):

- 3 kiwis;

- 4 heads of onions;

- 1 tsp dried coriander;

- 0.5 tsp ground black pepper;

- 1, 5 tbsp. salt.

Cut the onions into half rings, fold into a deep bowl or container and mash with your hands or a puree press. Place pieces of meat that are about the same size in there. Season everything with coriander, salt and pepper. Squeeze the juice from the kiwi, pour over the raw kebab and leave it to soak in the spices and fruit marinade for a while, but no more than 1 hour.

Sprinkle the red hot coals liberally with salt. Then the fat flowing down during frying will not cause a fire outbreak, and you will not overdry the meat.

Kebab marinade with kiwi: recipe with mineral water

Ingredients (for 2 kg of meat):

- 2 kiwi;

- 1.5 liters of mineral water with gas;

- 4 heads of onions;

- 1, 5 tbsp. ready-made spices;

- salt.

For marinating meat, use chemically resistant ceramic, glass, or chip-free enamel dishes.

Chop the meat into cubes the size of 2 stacked matchboxes. Combine them in the same saucepan with onion rings, diced kiwi and spices and salt. Stir everything well so that the components are evenly distributed, fill with mineral water, stir again and let stand for 1 hour.
