Korean zucchini is a vegetable spicy appetizer that is prepared in literally half an hour. This dish can be a good addition to meat or a side dish of cereals and pasta.
Ingredients for making Korean zucchini:
- medium-sized zucchini (the main thing is that it is not hard);
- 1 large carrot;
- 25 ml of apple cider vinegar;
- 1 tsp each coriander and salt;
- 1/2 tsp ground paprika;
- 2 tsp mustard seeds;
- a pinch of black pepper;
- 4-5 small cloves of garlic;
- about 70 ml of vegetable oil.
Cooking spicy zucchini in Korean:
1. Grind washed and peeled carrots on a special grater for Korean salads. Or you can simply cut it with a knife into thin long strips.
2. Wash the zucchini and chop it like the carrots. You don't need to peel a young tender zucchini, it will be even tastier.
3. Then you need to prepare the dressing. Mix the vinegar and oil and pour over the mixture of zucchini and carrots. Then pour spices there: mustard seeds, paprika, black pepper, salt and coriander. Squeeze the garlic into a bowl of vegetables with a press.
You can use ready-made Korean carrot seasoning to speed up and simplify the preparation of the snack. However, practice shows that it will be tastier to cook the dressing with your own hands, based on your culinary preferences.
4. Mix all the ingredients of the snack well and refrigerate for half an hour. You can marinate the appetizer for an hour, then its taste will be more pungent and deep.
