Farfalle (Italian farfalle) is a butterfly-shaped pasta made from durum wheat. The first mentions came from Italy, where they made curly pasta, sometimes tint with beets, spinach or cuttlefish ink. Farfalle is perfect for side dishes and as a component of salads, casseroles and a separate dish with various sauces, cheese and tomatoes.
History of creation
The baker's children decided to decorate the Christmas tree with crafts and toys that they made themselves. One bizarre and simple form really liked the father, and he decided to try to reproduce it from the test. He showed the finished bow tie / bow to the Milan chef, who decided to order a batch of such pasta and serve it on the table for a festive dinner. The tradition of cooking such pasta at home with the family remains in our times. I especially like to serve classic pasta in the form of the flag of Italy - the farfale is laid out on a rectangular plate, poured abundantly on top with tomato sauce and sprinkled with a mixture of herbs.
An important condition in the preparation of all dishes is properly boiled pasta in salted water. If the pasta is made from durum wheat, the storage conditions were observed, then the cooking time is 7-10 minutes. You can use a little trick - add a drop of vegetable oil to the water, then the bows will not stick together and the time will be reduced to 5 minutes.
Farfalle with red fish and caviar
- butterflies - 300 g;
- chilled pink salmon - 200 g;
- red caviar - 50 g;
- garlic - 1 clove;
- chicken broth - 2 cubes;
- cream 20% - 1 tbsp.;
- white wine - 110 ml;
- olive oil - 30 ml;
- parmesan, salt, spices to taste.
- Blot the fish with a damp towel, cut into large pieces. Finely chop the garlic
- On two burners, put water on the pasta and a frying pan.
- Salt water, let it boil, add pasta, cook aldente.
- Heat a frying pan, add garlic, brown and add salmon, fry for 2-3 minutes, pour in wine, cream and simmer for 5 minutes.
- Put the prepared pasta to the fish, add the caviar, mix well.
- Arrange on plates, sprinkle with Parmesan, garnish with parsley.

Pasta with mushroom béchamel sauce
- champignons - 350 g;
- onion - 1, 5 heads;
- pasta - 500 g;
- ghee - 50 g;
- cream - 1 tbsp.;
- flour - 30 g;
- a pinch of spices.
1. Rinse the mushrooms, remove excess moisture, cut into thin slices, put in a preheated pan. Add finely chopped onion, salt, add pepper and fry for 15 minutes until blush.
2. Prepare the sauce. Melt butter, add flour, stirring constantly, fry for 1-2 minutes. Gradually add flour and knead until smooth without lumps. Let it boil, add the onion-mushroom mass, turn off the gas.

Chicken fillet pasta
:
- pasta - 450 g;
- poultry meat - 0.5 kg;
- onion - 2 pcs.;
- carrots - 1 pc.;
- sour cream - 250 g;
- salt, pepper, provencal herbs.
- Wash the meat, remove moisture with a napkin, cut into thin strips.
- Peel the onion, rinse, cut into half rings.
- Grate the carrots on a coarse grater.
- Put onions, carrots, chicken and butter in a frying pan, simmer over high heat for 5 minutes, add spices, sour cream and simmer under a lid for 10 minutes.
- Boil the pasta, put in a frying pan, mix the contents. An appetizing dish for the whole family is ready!
Warm salad with beans and pumpkin
- green beans - 100 g;
- pumpkin - 150 g;
- pasta - 300 g;
- honey - 1 tbsp. l.;
- olive oil - 50 ml;
- juice of one lemon;
- salt, sugar, seasonings to taste.
- Chop clean vegetables into pieces, fry over high heat in oil.
- Put honey in the contents of the pan, add salt and simmer for 20-25 minutes. 3 minutes before ready to add spices.
- Boil the pasta, drain the water, put in a salad bowl, add the fried vegetables with juice from the pan, mix.

- bell pepper, small eggplant - 1 pc.;
- champignons - 5 pcs.;
- mozzarella - 4 balls;
- butter - 10 g;

- Wash the vegetables, dry on a towel, cut into rings or strips no thicker than 1 cm, put them on the grill grate (you can in the oven) and bake.
- Boil the pasta in salted water, drain the water, grease with oil, put on portioned plates.

Vegetable snack with pasta
To prepare a summer snack, you will need the following products:
- bows - 200 g;
- milk zucchini - 1 piece (medium size);
- radish - 2-3 pcs.;
- bow (feathers) - 1 branch;
- mini tomatoes - 3-4 pcs.;
- quail eggs - 2 pcs.;
- pine nuts - 20 g;
- soy sauce, vegetable oil, salt, spices to taste.
- Wash the zucchini, cut into thin half rings, salt, and leave for 15 minutes. Boil eggs and pasta.
- Rinse vegetables, blot excess moisture. Cut the tomatoes into 2-4 parts, thin radishes, onions with oblique shavings.
- Simmer the nuts in a dry frying pan until golden on the sides.
- Mix prepared foods in a salad bowl, season with sauce and butter, add spices.
- Put on a plate, garnish with eggs and herbs. Serve as a separate dish. Option of garnish for poultry is possible.
Pumpkin Seed Pasta
Structure:
- bows - 400 g;
- sweet pepper - 2 pcs.;
- zucchini - 1 pc.;
- cream - 70 ml;
- seeds - 100 g;
- parsley - the tops of one bunch;
- vegetable oil, salt, sugar;
- dry basil, dill pinch at a time.
Prepare all foods. Wash the vegetables, cut into cubes, fry until soft. Cook the pasta until half cooked, strain, transfer to a pan with vegetables, season with spices, pour in cream and simmer for 15 minutes over low heat. Sprinkle with seeds and herbs before serving.
Casserole
This is a clear and easy recipe that your kids will like, and if you add ham, then dads will also like it.
- pasta - 200 g;
- eggs - 3 pcs.;
- milk / sour cream - ½ tbsp.;
- oil - 50 g;
- semolina - 2 tbsp. l.;
- salt, sugar, cinnamon, vanillin pinch each.
Boil the pasta. Beat eggs with sugar, add milk, seasonings, semolina and stir with a spatula until smooth. Pour the resulting mass into a preheated pan, add the pasta, gently turn it over with a spatula and bake on the minimum setting under the lid.
