Crepes are thin and tender French pancakes, which can be prepared with all kinds of fillings. Crepes go well with creamy ricotta cheese and a light lemon flavor.
Preparation of food
To make French pancakes with lemon and ricotta, you will need: 1/3 cup flour, 2 eggs, 1 egg yolk, 3/4 cup milk, 1 tsp. butter, a pinch of salt, 100 g ricotta cheese, 1 tbsp. l. powdered sugar, 1/4 cup heavy cream, 3/4 tsp. lemon juice, zest from 1 lemon.
Cooking lemon crepes
We will start the preparation of French crepes with the preparation of the dough. Take a medium bowl and sift the flour into it.
Now add half a teaspoon of lemon zest, eggs and egg yolk to the flour and whisk the ingredients gently. While whisking, slowly pour in the milk and melted butter. Make the dough smooth and then refrigerate for half an hour.
Remove the chilled dough and start baking the pancakes. It is better to grease the pan with butter. Bake each pancake on both sides until golden brown. Then you can start preparing the cream.
Whisk the ricotta, powdered sugar, remaining lemon zest, and lemon juice in a blender. Whisk the cream separately until soft peaks. Add the whipped cream to the ricotta and beat again.
Serve the French pancakes with the resulting cream, sprinkled with a little zest and icing sugar.
