The recipe for the French onion soup that we now know appeared in France in the 17th century, and in addition to onions included other products, but the secret of the soup was the correct processing of the main ingredient. Correctly sautéed onions will make the soup truly fragrant. The highlight of this dish is that when the onion is completely ready, white wine is added to it, which gives the soup an aroma and special taste.

According to a famous French legend, onion soup was once prepared by Louis XV himself. The king was on the hunt and was forced to spend the night in a hunting lodge. At night, Louis XV got hungry, but apart from onions, butter and champagne in the whole house, the king could not find other products. At the request of the king, all of the listed ingredients were mixed, and it was then that the first French onion soup, prepared by the monarch himself, appeared.

French Onion Soup Recipe

You will need:

- onions - 800 g;

- vegetable oil - 4 tbsp. l.;

- butter - 50 g;

- wheat flour - 1 tbsp. l.;

- sugar - 1 tsp;

- white bread - 300 g;

- dry white wine - 200 ml;

- meat broth - 2 l;

- hard cheese - 200 g;

- salt, pepper - to taste.

Wash onions, peel and cut into cubes. Put a frying pan on the fire, brush the surface with vegetable oil, and then melt the butter. Put the onion in the pan and fry it for 30 minutes over low heat, while constantly stirring the contents of the pan. Then, when the onion turns light brown, you can add flour to it and simmer for another 5 minutes.

Now pour 1 liter of broth into the pan, stir and let the contents boil.

Pour the broth into a saucepan and bring to a boil. Transfer the onion to this saucepan and cook for 30 minutes, stirring constantly. After this time, add sugar, wine, salt, pepper and cook for 2-3 minutes, then remove the pan from heat.

Cut the white bread into cubes and fry in a pan. Grate the cheese.

Pour the prepared onion soup into bowls, pepper, sprinkle with grated cheese and add croutons. French onion soup should be served hot.
