It is not possible to enjoy onion soup in every restaurant. However, the recipe for this dish, which was originally a poor man's stew, is quite simple.
It is necessary
- - onions - 7 pcs.;
- - water - 1.5 l;
- - flour - 3 tablespoons;
- - butter - 3 tablespoons;
- - salt, black pepper - to taste;
- - bread - 1 - 2 slices per serving;
- - cheese - 50 g.
Instructions
Step 1
Medium onions must be peeled and then cut into small cubes. In a thick-walled saucepan, or in a saucepan, heat the highest quality butter. If there is no good butter, it is better to use vegetable oil, but in no case replace with margarine or a spread, since the taste of the dish will greatly deteriorate from such a replacement. The oil needs to be melted and only slightly heated, not allowing it to overheat.
Step 2
Put the onion prepared as described above in hot oil. Stir well and simmer over medium heat. In this case, it is necessary to stir the onion from time to time so that it does not darken and burn. Simmer the onions in this way until they are translucent and soft. Add salt and pepper, then gently stir in flour, stir immediately and fry, continuing to stir, until flour is golden brown or creamy.
Step 3
Gradually pour cold water into the hot mass, stirring occasionally to prevent lumps from forming. Now you need to move the pan with the prepared food to high heat. Bring the mixture to a boil, then reduce the heat to very low and cook the soup for about 20 to 30 minutes. If desired, at this stage, if you do not like boiled onions, you can rub the soup using a hand blender.
Step 4
The classic onion soup recipe recommends using stale bread. But it is quite possible to replace it with fresh bread by drying the slices in the oven. Put the dried bread on the bottom of the plate, pour over the soup and sprinkle with grated cheese on top.
