Onion soup is a famous French dish that is perfect for a romantic dinner and for receiving guests. The soup has an exquisite creamy taste with a hint of dry white wine. Today, you can cook French onion soup not only in a regular saucepan, but also in a multicooker.

It is necessary

  • - 4 large bulbs;
  • - 5 glasses of beef broth;
  • - 50 g butter;
  • - 50 g of any hard cheese;
  • - 0.5 glasses of dry white wine;
  • - 1 tbsp. a spoonful of flour;
  • - 2 cloves of garlic;
  • - 1 French baguette;
  • - 3 bay leaves;
  • - ¼ teaspoon of thyme;
  • - a pinch of sugar;
  • - vegetable oil (for making croutons);
  • - salt, black pepper to taste.

Instructions

Step 1

Beef broth should be prepared in advance - for this we take 500 g of beef with bone and pour 1.5 liters. water, add vegetables and boil for about 1 hour. Filter the cooled broth, leaving the meat and vegetables in the saucepan (you won't need them to make the onion soup).

Step 2

Peel the onion and cut it into thin half rings. Put butter in the multicooker bowl and select the "Stew" program. After the butter begins to melt, place the chopped onion in the bowl. Cook the onion with the lid closed, but stir it occasionally. It's worth noting that stewing onions is the most time consuming and important part of this recipe. The longer the onion is simmering, the tastier the soup will be.

Step 3

After 20 minutes, add a pinch of sugar to the onion - this will improve the caramelization process. It is important that the onion is fried evenly and in no case is burnt, otherwise the taste of the soup will be spoiled.

Step 4

After the onion is fried, add flour and chopped garlic clove to it, mix thoroughly and pour in half a glass of dry white wine. Then add thyme, bay leaf and season with black pepper.

Step 5

We cook all the contents for another 30 minutes in the "Quenching" mode. About 5 minutes after the start of the program, add beef broth, salt to the onion and mix everything thoroughly.

Step 6

While the soup is boiling, we are preparing croutons. Cut the French baguette into transverse pieces and fry it in a pan, oven or toaster. Rub the hot bread with garlic.

Step 7

Before serving the French onion soup on the table, pour it into a plate, put 2 croutons on top and sprinkle them generously with hard cheese grated on a coarse grater. Then we heat the dish in the microwave for 2-3 minutes.
